The Vegetarian Toddler



Nurturing Little Tastebuds: Wholesome Adventures in Toddler Vegetarian Delights

Recipe 1:

Cheesy Veggie Quesadillas Ingredients:
  • 4 whole wheat tortillas

  • 1 cup shredded cheddar cheese

  • 1/2 cup diced bell peppers

  • 1/2 cup diced tomatoes

  • 1/4 cup chopped spinach

  • 1/4 cup diced onions

Instructions:

  1. Preheat a non-stick pan over medium heat.

  2. Place one tortilla in the pan and sprinkle half of the cheese over it.

  3. Evenly distribute the bell peppers, tomatoes, spinach, and onions on top of the cheese.

  4. Cover with another tortilla and press gently with a spatula.

  5. Cook for about 2-3 minutes or until the bottom tortilla turns golden brown.

  6. Flip the quesadilla and cook for an additional 2-3 minutes until the cheese melts.

  7. Repeat the process with the remaining tortillas and filling.

  8. Allow the quesadillas to cool slightly before cutting them into wedges.

  9. Serve warm and enjoy!
