Recipe 2:

Sweet Potato and Black Bean Burgers Ingredients:
  • 2 medium sweet potatoes, peeled and grated

  • 1 can black beans, rinsed and drained

  • 1/2 cup breadcrumbs

  • 1/4 cup chopped fresh cilantro

  • 2 cloves garlic, minced

  • 1 teaspoon ground cumin

  • 1/2 teaspoon paprika

  • Salt and pepper to taste

  • Burger buns and desired toppings

Instructions:

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

  2. In a large bowl, combine the grated sweet potatoes, black beans, breadcrumbs, cilantro, garlic, cumin, paprika, salt, and pepper.

  3. Mash the mixture together until well combined, using the back of a fork or a potato masher.

  4. Shape the mixture into patties and place them on the prepared baking sheet.

  5. Bake for 25-30 minutes, or until the burgers are golden brown and firm.

  6. Serve the sweet potato and black bean burgers on buns with your favorite toppings like lettuce, tomato, and avocado.
