Sweet Potato and Black Bean Burgers Ingredients:
2 medium sweet potatoes, peeled and grated
1 can black beans, rinsed and drained
1/2 cup breadcrumbs
1/4 cup chopped fresh cilantro
2 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon paprika
Salt and pepper to taste
Burger buns and desired toppings
Instructions:
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large bowl, combine the grated sweet potatoes, black beans, breadcrumbs, cilantro, garlic, cumin, paprika, salt, and pepper.
Mash the mixture together until well combined, using the back of a fork or a potato masher.
